
Jimmy has enjoyed cooking for 20+ years. It wasn't until he delved into grilling and smoking that he found his true passion.
Beginning in 2018, he joined the Steak Cookoff Association, traveling to different areas of the country honing his skills, competing in ribeye steak cookoffs. In 2019 at the SCA World Championship, he finished 14th out of over 300 competitors from all over the world.
In 2020, he finished 3rd place in the US Division in the Ancillary category at the SCA nationals.
In 2021, the team won Peoples Choice at the Eighter from Decatur Food Truck Challenge in Decatur, Texas and returned the next year to win the Grand Champion prize.

Trish does not claim to be a cook but her creative background as a landscape designer launched her interest in assisting Jimmy with the Ancillary entries in competition. From appetizers, desserts and everything in-between that was not steak, she immersed herself in the most creative (and delicious) entries, helping the team to place 3rd in Ancillary category in the US Division of the Steak Cookoff Association in 2020.
You will now find her at the front of the house making sure things run smoothly as well as welcoming and making customers feel at home. She is responsible for the marketing and any other creative aspect of the business, canning/packaging product for sale, making all the house-made condiments and desserts from scratch and cold-smoking the cheeses we sell every winter.

We refuse to compromise on quality. All our food and ingredients are hand-selected each week and cooked from scratch using quality meats and the freshest vegetables available, along with herbs and specialty seasonings.
As our business name implies, we use Smoke & Time to insure you get the most tender, juiciest, and best tasting meat as well as delicious sides, sauces and condiments.

Our team has catered events from backyard BBQs to white tie events and everything in-between. We also offer in-home chef services- we take care of all the prep, cooking, serving and clean-up while you enjoy your guests!

We currently offer a lunch menu and delivery service once a week to local schools for an affordable price. All of our lunches are prepared and delivered by us, ensuring our teachers and staff receive the best product and service available. If you are employed by Alvord, Bridgeport or Chico ISD and are interested in ordering lunch, please refer to the flyer located in the teacher/staff lounge for information or like our Facebook page to keep up-to-date with our weekly reminders. Most districts do not allow outside vendors to deliver to students so please be sure that your child's school approves.

'Lil Enos is our 500 gallon traditional off-set smoker, designed by Jimmy himself and built by Rockin W Smokers, a small business that has built several smokers for well- known television personalities and successful BBQ competition teams. We waited more than a year after ordering it back in 2017 when we lived in Springtown.

Where the journey started! We joined the Steak Cookoff Association in 2018 and then started slinging 'Q from our front yard in Weatherford, Texas. At the time, it was just a cargo trailer and a couple of folding tables inside to work off of. We did eventually renovate it to accommodate our needs for competition but moved on to our Airstream food trailer not long after. We ended up selling it to a fellow steak cooker from up north.

We decided to search for a unique food trailer to stand out from the crowd. In the summer of 2021, we bought a vintage Airstream we nicknamed 'Smokestream' and renovated it. We were still slinging BBQ from our front driveway but expanded our services to special events and private parties.

The doors to our brick and mortar located at 8879 N US Hwy 287, just north of Alvord, Texas opened in Fall 2022. Since then, we have offered our Central Texas style BBQ on weekends only and most recently on Friday nights that includes a different buffet each week. We also began hosting special events and occasional 'Steak Night' events that have become very popular.
